This is a dish we grew up calling spanish meatloaf. Seems the Puerto ricans can cook just about anything in this sauce from chicken fricassee, to salt cod to pot roast. Tonight was the first time I tried it with a smoked meatloaf and man was it fantastic.
An adobo sauce is just that., every house or family has there own recipe for a basic tomato, garlic, onion and chili pepper sauce. This one has the addition of olives, cilantro, oregano and that little packet of Goya sazon.

After I simmered the meatloaf in the sauce for about 20 minutes and opened the lid it smelled like a fresh opened can of chipolte peppers minus the extreme heat of course. Usually the potatoes go in the sauce and you serve with white rice. Today we served it up with some mashed potatoes.

Pretty sure other folks here as well as I would like that Adobo recipe.
 
You guys are too kind. Some of the best food in the world are these one pot masterpeices , usually of ethnic beginnings. Add a little smoker mojo and the rest takes care of itself. Couple of weeks ago Erain put together a one potter with kielbasa, saurkraut and noodles(he called it a pierogi pot or something). I went to work a few days later and had some pirogies hangin around so I whipped up his dish but with the pierogies and all the spices from a traditional choucroute. The old folks couldnt of been happier if I fed them Filet mignon. Ghetto food is good for the soul. Course I juiced the sausage up on the silver smoker first.

I guess this is the sauce I made yesterday...albeit unwittingly. Fresh diced tomatoes, Hungarian hots, Kosher, onion, garlic, coriander and a dash of wine vinegar. I ate it as a salsa... but dang! I sense a whole new brave world here!
