I was looking through SMF today, trying to find something a vegetarian and a vegan (in-laws visiting) would eat. Taking inspiration from HERE  and the fact that the grocery store had a 3 lb chub of 80/20 for only $5, this is where I ended up. (Vegans can fend for themselves.)

I followed the recipe above...


After filling it with cheddar!


All closed up!


And yes, that is a bacon weave...

I am smoking it right now, unfortunately on the foil because I was worried it was going to fall apart on the way into the smoker. 

I can't wait!

I'm not seeing the "smoke ring" I keep seeing in other people's ground beef smokes. Am I missing something here?
