Smoked meatloaf and mashed potatoes

  1. Did my first smoked meatloaf today and figured I would try mashed potatoes too...


    I'll apologize now for the lack of in-process pics but some yard work got me sidetracked. End result couldn't have been better though!

    Fresh picked potatoes right out of the garden this morning, quartered them up and boiled until fork tender, smoked 'em for 25-30 min then mashed and seasoned. The meatloaf was full of all fresh picked green pepper, onion, garlic and tomato. Added 2 eggs, a handful of breadcrumbs, a handful of brown sugar and a squirt of ketchup. I guess the reason my girlfriend and I like smoking/grilling/cooking is we never keep track of what we use or how much, and chances are we never have the same ingredients twice lol. I enjoy reading all of the posts on here so I thought I'd share....

    Looks good.. I love smoke meat loaf.  I'll have to try your smoked potatoes for mashed.  I usually make smoke baked potatoes with some rub on them.
     
  3. I'm not gonna lie... I've ruined some potatoes in the learning process lol. I have found that if you use a meatloaf pan(or any size pan you choose I guess) and put about a 1/4" of water in the bottom of it, fill it with tender, quartered potatoes with a very loose fitting piece of foil it still takes smoke and doesn't dry out too quickly. If I use a meatloaf pan its 225f for 25-35 min. I'm sure a little dash of rub wouldn't hurt either

    There will never be agreement on meatloaf, or chili, or, guacamole, or  .........

    I never thought I would like smoked meatloaf, but it is GREAT!

    Meatloaf and mashed potatoes?  Who could ever argue over that combination?

  7. Down home cooking is the best. The more fresh fruits and vegetables (and butter) in anything you cook, the better! It's sad how much processed food we eat.
