Just stumbled on to this site off google. I work in the processed meats industry and love to hunt, fish, and most of all cook and create things. I work as a food technologist creating new flavors and techniques at Texas' largest Processed Meats plant. When we're busy we're pumping out 1.5 million pounds a week in Sausage and other Regional products like Boudin and Brisket for the entire US. I have tons of sausage recipes in excel form where all you have to do is put in your weight and gives you the rest. I'll post them if I can figure out where and if I can post an excel file!
