Just stumbled on to this site off google. I work in the processed meats industry and love to hunt, fish, and most of all cook and create things. I work as a food technologist creating new flavors and techniques at Texas' largest Processed Meats plant. When we're busy we're pumping out 1.5 million pounds a week in Sausage and other Regional products like Boudin and Brisket for the entire US.

I have tons of sausage recipes in excel form where all you have to do is put in your weight and gives you the rest. I'll post them if I can figure out where and if I can post an excel file!

welcome to smf, you will have a great time here. any questions will always get you some opinions. the people here do a great job running the site and the people participating... well they smoke meat so they know where its all at!!!!!

Great forum yall have here. I will post my sausage recipes in the sausage section today.

The buck I killed in my avatar scored 196 and change 27" wide 29" beams a true monster. I took him in South Texas this past bow season.
 
Welcome Mesquite. I used to work for Smithfield Foods. Definitely had its benefits. Though I hadn't started smoking, used to get great deals on ribs and such. Anyway, glad to have you and definitely share those recipes.
