Todays experimental batch of wings consists of the following recipe.
2 lbs of whole wings cut up
1/2 bottle of Jolokia hot sauce
1 bottle of Uncle Dougie's Chicago Style Chicken marinade
I also prepared a spray bottle with malt vinegar, olive oil and some more Jolokia sauce to keep 'em misted with.
The MES is warming up to 250 right now, with a small handful of mesquite chips to smoke em with. The last batch I did were way oversmoked, enough so that I didn't even bother posting here about them. Hopefully this batch will come out right in a couple hours.
If you haven't tried Uncle Dougie's chicken sauce yet, I highly recommend it, it works on wings, chicken breasts, and pork chops very well. It is probably my most favorite wing sauce to use, and it doesn't even go on them at the end, but rather you cook them in it (using the oven method, not a smoker.) The wings will fall off the bone when you are done cooking them!
