I saw Jeff's recipe and it looked so good I decided to try it. It was the best meatloaf we've ever had. Smokey, spicy and juicy meaty flavor in every bite. I might add some sauteed mushrooms next time. I smoked it in the UDS for about 3 hours at 225deg with Kingsford Blue charcoal and apple wood.
Just on the smoker. I let it set in the fridge for a bit to firm up, otherwise it would likely ooze off the planks.
Tossed a thick layer of BBQ sauce on about 30 minutes before it was up to temp.
Letting it rest up a few before slicing into it.
Nice smoke ring and super moist and delicious. This recipe is definitely a keeper!
