Hello all. My girlfriend is on a strict diet. And Today was the day for her "cheat meal". If any of your significant other is on a strict diet and does this. I don't have to tell you its treated almost the same as a last meal for someone on death row. This is her favorite meal and she often chooses it to be "the one". Myself, like most of you I'm sure. Prefer your chicken rubbed and smoked. Maybe sometimes with a little sauce. But with that said I really enjoy this one myself. I thought some of you as well as your other half might want to give it a try. Okay, enough of that. Let's get to it!

The chicken was brined overnight in the slaughterhouse brine. Here it is with a mix of melted butter, a bit of honey and some mustard. Then rubbed with your favorite chicken rub. If you want the one I use I'll gladly provide it.


Cooking along nicely. I like to cook it at a lower temp to really get the smoke flavor I like. And since these were boneless skinless chicken breasts. I didn't have to worry about achieving that ever so loveable crispy skin. BTW I love this maverick, not sure why I have to take the back off every time to turn it on though.

Here's the honey mustard. I make my own with a blend of mayo, mustard and honey. I find it tastes better than the stuff out of the bottle. And gives you the ability to tweak it how you want. Some like a stronger mustard flavor. Others prefer a sweeter more honey(the girlfriend). Keep in mind this can be done with any sauce you like. I have done it with ranch and I enjoy it done with BBQ sauce too. Blue Hogs sauce on this is fantastic. But it's all about her tonight.


Here it is cooked to 165 degrees and covered with a heaping spoonful of the honey mustard.


I usually top with grilled bell pepper, onion and mushrooms before it gets covered in cheese and bacon. But I was to lazy to drive to the store today and we were out. She let that one slide. Now I've done different cheeses as well so use your favorite. She likes the shredded mild cheddar. And why Bacon? Because BACON that's why bacon. I take this back out to the pit just until the cheese is good and gooey.
