Thought I'd share with you a 10 1/2 hour ham smoke. This was rubbed, injected with BBQ Mesquite (Cajuninjector), spritzed with apple juice mixed with rum and basted with honey the last 3 hours. All smoked with apple wood.
 
I just had dinner... and that Q View sparked my taste buds! Good smoke Bassman.
 
That looks absolutely delicious. Wow. I still have Easter ham left over and I think I may go get a few slices to eat while I look at this picture.

You ought to give home cure a try for your next ham bassman. So many possibilities, its fun, and not terribly complicated.

Good price too on that ham, would be twice that where I live.

Joe, my wife can't take smoked foods. Something about it makes her ill (too many stomach surgeries I guess). I have to wait until I can gather up some help to eat it, so I try not to get too involved. I do want to try some Canadian Bacon one day
