Smoked Ham - Score or Dont Score?

Doing a couple of hams later today.... I have smoked both ways scoring the ham with diagonal cuts and not. But wondering what the rest do???
 
I always score mine just to help break up the fat cap and it also give you alittle more surface area to apply your rub to. Now some of the folks here trim their hams, butt, ribs but I don't because I like the fat to me it adds flavor. I trim alittle but not much. Ok scoring it gives it a good look to with those litle diamonds standing tall in the Qview too.
 
If it's a bone in ham - yeah score that bad boy. Makes the presentation better and I think it tastes better (
icon_wink.gif
). I too leave the fat and let the people trim it off their own slices as they see fit.
 
I agree score it. And in each little cross intersection, insert a whole clove. YUMMY and great looking.
 
Racy has the right answer, score it and throw the clove in at each corner, also after it's scored you pour honey on and it will get in the scores and make it real sweeeeettttt.
 
Yup same here---score it.

I like to throw a clove in each diamond, add some pineapple rings all over the place, and the brown sugar gets caught in all the big grooves.
