Here's my smoked salmon I had for Sunday dinner with smoked tri tip and the salmon chowder (on another thread)hope you guys take a look at.

The salmon,

Couple nice fresh pieces of salmon, I took the skin off





Seasoned with extra virgin olive oil on both sides, garlic salt, garlic pepper, chopped fresh garlic and dill on both sides.




Smoker up to 220, Tried out for the first time my propane modified SNP side firebox smoker, it's great, holds a constant temp thats for sure. Popped the salmon on, put a water pan next to the fire for some moisture, smoked it for only 30 minutes 40 minutes tops to keep the fish moist and tender and not all dried and gritty, no siree, 30 minutes and you got great, perfectly moist smoked salmon.




30 or so minutes later




It was a great dinner

Yup, perfect med, by the time you let it sit covered, it cooks a little more. I like it on the med side slightly under cooked. My smoker had a range 225-245, found the hotter spot, cooked her up, 40 minutes tops, juicy salmon, when you poke it with your finger lightly you will notice it is a little soft, with a little bounce to it then again the filets are almost separating to your fingers touch, good to go, it doesn't have to be hard to your touch to be done.
 
I don't know what happend to the pics, I'll check with photo bucket to see why the pics got moved or removed?, no clue why that happened, if anyone knows possible cause let me know. Photo bucket is a free pic hosting site. or is it something to do with this site? I'll see what I can find out.
 
OK, I figured it out, what happened is that after I uploaded the photos to this forum I went and deleted the pictures from my photo bucket album, so photos must be kept in my photo bucket album to be viewed. So I'll upload the photos again and leave it there. Hang on I'll get it.
