Okay….for the Superbowl I’m looking to do a day of smoked EVERYTHING and I think I’ve come up with a menu, but I wanted an opinions on the breakfast recipe I came up with.  I’m not sure if anything like this has been done, but I didn’t see a recipe similar. 

Smoked Double Stuffed Potato and Eggs

Ingredients

6 Russet Potatoes

1.5 Cups Cheddar Cheese

1 package of bacon (or more...I'm not judging)

1 TBS of favorite rub

¼  Cup Heavy Cream

Olive Oil

Salt

Night Before
  1. Wash and dry potatoes
  2. Rub potatoes with oil and sprinkle with salt
  3. Place in smoker at 225-250 for roughly 3hrs using hickory, apple or pecan.
  4. Remove once soft to the touch, allow to cool at room temp.  Place in fridge until the morning.
Morning
  1. Fry up the bacon
  2. Cut the potatoes in half and scoop out inards (leave kinda chunky).  Make sure to keep the skins.
  3. Using some of the bacon fat, fry up the potato you scooped out for 5min or so (just to get some color and crisp).
  4. Dust potatoes with rub.
  5. Bacon should be cool by now, so crumble it and set aside.
  6. Dice jalapeno and set aside.
  7. In a mixing bowl add 6 eggs, ¼ C of heavy cream and a pinch of salt and beat it like it stole your bike.
  8. In the skins fill with some of the potato and cover with egg mixture (about 50/50 mix).
  9. Cover liberally with bacon, pepper and cheese.
  10. Place back into smoker at 300 for approx 30min using the same wood you did in step 3.
  11. Serve with left over bacon and potatoes.
This seems like a bit of work, so before going all in, I was wondering if any of you see any flaws with this.

Obviously, if this works anything else could be substituted in as fillings (mushroom, ham, scallions, onion, sausage, etc.)
 
Okay then....I'll make it up and include pics next weekend.  Thanks for the input.
 
Should be interesting. Seems like I would mix half the Goodies in with the potato egg filling and the rest on top. Just putting all the Cheese, Bacon and Japs on top sounds like you will end up with Potatoes surrounded by puddles of topping. As the cheese and stuff starts to melt, it may just run off and lay on the tray around the potatoes. Plus side...MORE BACON IN THE SPUDS!!!...JJ
 
Good call....maybe I just do both to see what turns out better.  If I'm doing them, I might as well try all options.
 
Okay.... As promised, these were made and turned out fantastic. I did make a couple little changes and might do some things a little different next time, but all in all this was a winner. Tomorrow when I have more time I'll write up the recipe again with changes and more pics. For now, here is the end product.
