Since I love cured chicken thighs so much I thought about trying turkey instead. A quick call to my butcher friend and found out they had them frozen. I had never seen them before, but never looked either. I asked Dave the other night about the legs he did and he said he never did thighs either. Anyway a quick stop at the store and we couldn't find any.

I dug around the chest freezer and found one lonely package buried.

Only problem was they were 1.89 a pound.

1.34 for the package, a cheap experiment.



Charged me .59 a pound instead.

They are nice and meaty. 2 Tbs TQ and some Youshida's following Dave's lead on his chicken thighs, in the fridge for 3 - 4 hours. I figure I'll put them on about 10 Pm and should be done by 12 AM.

I did a search on here and couldn't find anything, smoking thighs, let alone curing them. I used to do drums on the Weber but never liked the tendens to chew around.

If they are any good, I'll take my butcher one tomorrow.

I am hoping they will be as good or better than the chicken thighs that I love so much, anyway, wish me luck.

Wow Ron, I've never seen turkey thighs either.
Love turkey and I know your chicken thighs are outstanding so I can only imagine how good these will be.
Looking forward to your verdict.
 
Never knew you could buy just thighs. Waiting to see how they turn out, sure they will be excellent as usual...
 
I gotta have a look at these when they're done. After all the q-views on legs lately, I asked my wife if she's seen turkey legs anywhere around here...she said they're quite spendy, and not available very often, and only in limited stores...I guess they're more popular down south, so that's where most of 'em get shipped.

i'm on pins and needles here to see how they came out but I already know how they will be great as usually. But it will wait for the Qview and atleast see them.
 
All done.



After rinsing the cure off I painted them with Youshida's, garlic, and lemon pepper.



All done in about 2 hours.

They were good but, I think the chicken thighs are much better and juicier, JMHO. Maybe I did something wrong?

Maybe that's the case Dave, I just had another one and it was stringy and not nearly as good as the chicken. I guess I will just stay with the chicken thighs for now.
 
I've done turkey thighs a few times and they can be stringier than chicken but I like them.

Ron should I ever find a bag of TQ, how is the taste different than brining with salt and sugar? When I do chicken thighs I don't brine since they are so moist. I get the hammy taste with a salt sugar brine. Not always a positive for me so just wondering what TQ brings to the table. I understand it's use as a preservative, just trying to understand the application here.
 
Well for me, and maybe only me, it adds a certain twang and also texture change. I haven't brined in a long time so I can't compare. I'd send you a bag if the shiping wasn't so expensive, it costs more than the product.

Maybe Dave can add to this.

sometimes trying something a little new, but still comparing them to some thing else might lead to false expectations. i betcha they were still very good... but chicken isnt turkey or vice versa... if you had been smoking the tukey thighs all along and now just trying the chicken, i suspect the same reaction would have resulted... either way thks for sharing you observations!!!
