Tried some Cornish hens on the UDS.  Brined in buttermilk, s/p, and sugar for 4hrs.  fired the UDS up to 250deg and threw on the birds.  At 140deg applied a raspberry orange chipotle glaze.  Cooked 'um 'til 165deg and pulled to rest for 15min.  They came out pretty darn tasty!

i will have to try these cornish hens, i guess they are a lot like chicken, can you use the same seasoning for them too. or do you use something better.
I am thinking that teriyaki would work out great on them
 
We use to do Cornish Hens all the time, really don't know why we haven't had them in while.   Yours look great

You can use the same seasoning, but I brined mine with salt and pepper.  So I did not use salt and pepper as a rub...too overpowering.
