smoked a couple chuck roasts in my new Cajun injector XL electric smoker.
I really like this cooker because of its size and it has worked real well.
I rubbed the chuckies and cooked them for 3-4 hours in the smoker than moved to a Pan in the oven at 325. before I added the meat to the pan I sautéed some onion, course black pepper, a dash of crushed red pepper then added a powdered beefy onion soup and 2 cans of beef broth and cooked the chuckles in this till tender. my son works at Panera and brings home some killer bread so I buttered and grilled the bread along with onion and portabellas.
when the meat was tender I pulled And assembled the sandwich and topped with the mushrooms, onions , pepper jack and slid under the broiler to toast. I also made a sauce to top them with which was a 1/4 cup mayo, 1/4 cup sour cream, 1 tablespoon siracha and a tablespoon of captain Jims mean mr mustard hot sauce. check him out if you like hot sauce captainjimsauces.com
