Smoked Chuck made Enchiledas

Here's a  2.5# chuck roast I smoked today and turned into a pan of enchiadas

First I started with a 2.5 # chuck roast

I seasoned it with EVOO, Montreal Steak Seasonng and Garlic Powder

I smoked that on my WSM over lump and apple with a couple of other things

Took it to 165* foiled, and went to 205*.  Rested in cooler for 2 hours.  Then went after the enchiladas.  Here they are pre oven\

And post oven.  350 for 30 minutes

Thanks guys.  I ate 2 of them.  I'm to try and Saran Wrap the other 4 individually and freeze them for lunches at a later date.  We've had such awesome fall weather I'm glad I got to smoke in shorts and t-shirt yesterday.  Last year we had like 4" of snow on the ground at this time.
 
Man it is good to see ya back up and running again! You can send a couple of those my direction any day

Man oh Man there Dude you have made those enchilatas looks so good I ran right out and smoked a chuckie. Now I didn't make any enchilatas with it put I pulled it for the first time ever. It was pretty darn good to everyone loved it . So thanks  for the imperation and now your can thank yourself for I like to pull my chuckie.....LOL
 
Outstanding use of a chuck roast!  You just knew that I love Mexican food, didn't you?

Do you make your enchilada sauce?  if so, care ot share the recipe.  I tried this once using one of your posts and I loved.  Used canned sauce though.
