hello i have made smoked chicken before but every time i make it i get rubbery chicken skin is there a way that i can cook it at a higher temp for crispy skin
 
If you  to can't get your temps that high,pull it a few minutes early and finish on the grill or under the broiler to crisp the skin.

I take it out of the smoker when it hits 145, and throw it on a very hot grill for a couple minutes to take it the rest of the way to 165.  Comes out great.
