Doin some small wings tomorrow. Any thoughts on time and temperature? I was thinking 250 for 2hrs?
Hey Patty, I would smoke em between 275-300F for a couple of hours....probe a few to make sure they are at 165F.
Agree......hotter will make them more crispy skinned.

I'd go for 250F, smoke for 2 hours, probe... Done that on the weekend, with some peach & Thai sweet chili sauce. Wonderful!
