So I had some of these in the freezer and wanted to try smoking them. Put standard clubhouse chicken BBQ rub on and preheated the Mes to 275 F. 50/50 mix of maple and cherry soaked and loaded in the chip tray. Smoked for 1.5 hour and then finished on the BBQ for 25-30 min to crisp them up and finish with some honey BBQ sauce. My kids and wife loved it. I think next time 30 more minutes in the smoker would be perfect for tenderness. But all in all the chicken had an amazing sweet Smokey flavour.
