OK, so here's my first post of something I smoked. I usually cook something for family dinner on Sunday. My better 5/8ths asked me yesterday what I was going to make for dinner tonight. I had no idea and since my oldest daughter is getting married in 2 weeks we are watching our spending. so I said something cheap, she said smoke a couple chickens. Well, I thought about chicken pieces...

 I brined them which is something I have never ever done before, but will probably do quite a lot after finding out the great flavor and moistness it gave the pieces. Hers how they turned out...

Looks great. I brine all my chicken now too. And I do boneless pork chops as well. There are so many inexpensive meats that taste great when smoked. It's really great. What kind of smoker do you have? :grilling_smilie:
 
Tasty looking chicken! Brining is great for adding another level if flavor. But just to clarify, it's not necessary to get nice moist juicy meat.
 
Just your standard double barrel smoker (firebox on the side), nuthin too fancy. I've made a couple of after market mods on it like real thermometers down low where the meat is at for better temperature monitoring. I have an oven door gasket that I got from a buddy who used to own an appliance repair shop, this dudes a smoking fanatic (I traded him a pump that he uses for a cold smoking contraption he made for smoking cheeses and spices and whatever) that I am planning on putting around the smoker lid to prevent as much heat/smoke loss as possible. Maybe I'll put some pneumatic tires on it for ease of rolling from here to there.
