I started off with some chicken stock that I bought, cause I smoked the chicken

I cut up celery, scallions, one medium red onion and just left the petite carrots as whole, added 2 bay leaves, and 3 cups of water with some chicken bouillon cubes, some salt, pepper, and garlic.


Smoked the chicken for about 1 1/2- 2 hours in my weber grill with in direct heat, I used apple and hickory for the wood.

I used seasoning salt, salt and pepper and garlic salt for a rub on the skin.


I cheated on the noodles, I bought he frozen noodles that are thick, they worked out pretty well.

I used my cast iron Dutch oven it seems to do the best for soups.

Over all it turned out really good the smoke flavor in the soup is awesome, the bay leaves gave it that wow factor. Really pleased with the way it turned out.
 
Thanks everyone it did turn out very good, and dirtsailor2003 that is a great idea I never thought of boiling down my left over carcasses for stock, will definitely try that next time.

Great looking soup. Just last week we made smoked chicken rice soup. dirt has the right idea. We used stock that we had in freezer from smoked turkey carcass from the holidays last year. Then smoked a chicken to add meat to soup.
