Well I threw on 26 chicken legs today to go along with my meatloaf. I made a brine with water and my dads trick of adding enough water to float a raw egg. I also added onion powder, garlic powder, brown sugar, pepper, cheyenne pepper, red pepper flakes and cumin. I mixed this all up and marinated the legs for around 20 hours. I put them on the smoker at 180 to 200 for around 5 hours.

The brine ready for the legs.

Legs pulled from the brine waiting to go on the somker. Man do they smell good.

    Just going onto the smoker.

The load of legs and meatloaf.

Legs just pulled and cooling off.

Close up of the legs before they head to the fridge.

I can't wait to dig into one of these tomorrow and see how they taste.

Nice looking legs. Must be hard to not check out the meat to make sure it meets your quality standards.[IMG]

Good looking smoker. I see it's propane but it looks like your smoker pan is resting on wood which is in direct contact with your burner or is it an optical illusion? Always keeping an eye open for ideas for a smoker. I couldn't persuade you to take a picture of your burner to water pan location, could I?

NWDave I acually have four fire bricks on top of my turkey fryer burner so my chip pan is further away from the flame so my chips don't burn so fast. I sent you a PM so check it out.

Roger that. Thanks for the quick response. Looks like it might be time to drag out the table saw and the other wood working tools.[IMG] Now, where did I put that crab pot boiler burner?[IMG]

Yea after being in the smoke all day and having the legs sitting out on the counter cooling off and smelling the smoke again I just don't much feel like eating any of them. I will appreciate them much more in the morning.

Smoked chicken legs are one of my family favorites for smoked food to snack on. My father-in-law was disapointed when he came over tonight because they weren't quite ready yet. He likes to snack on them right out of the smoker and take a few home as well.
