Thanks! These were breasts. I sliced them in half, flattened with a meat tenderizer just a bit, and put some rub on them, then put a dollop of the cream cheese stuffing on one half, cover with the other half and wrap in thin sliced bacon. Easy and really good

Jarhead, We take a 1 gallon can of sliced jalapenos and start slowly adding sugar while mixing it until the juice becomes a syrup. Store them in a gallon size container in the fridge for as long as they last.  I will dice them up with a food chopper and mix with my cream cheese.  BTW, Ritz crackers and this filling are ADDICTING! Add some of the syrup if needed.

Ingredients    
4 servings
3 boneless skinless chicken breasts
3 jalapenos
1/4 cup favorite bbq rub
8 oz cream cheese
2 cup shredded cheddar cheese
1 lb bacon
1 jar favorite bbq sauce
Method    
20 mins
either preheat your oven to 350° or start your smoker and get preheated for 275°
next wash your chicken and pat dry. split breast in half like a hamburger bun. so you should have two mirrored pieces.
pound each breast halve about a 1/4" thick
split each jalapeno in half like a boat. making sure to cut off the stem and taking out seeds
mix cream cheese and shredded cheese together. fill each jalapeno half with the cheese mixture. I filled mine with as much as I could
take each half chicken breast and sprinkle the inside with a lite even coat of bbq rub.
now place you stuffed jalapeno cheese side towards the breast and wrap chicken like a burrito around jalapeno
now take the stuffed chicken breast and wrap it in two slices of bacon.
take your stuffed chicken and either place it on a rack on a baking sheet and cook for one hour or until chicken is done. or place in smoker and cook for two hours.
either cooking method you chose twenty minutes before cooking is done brush on bbq sauce
