Hey guys, I am wanting to smoke some chicken and turkey wings but I don't want to use a sauce. All i want to do is season and smoke them. I would like to use a mild Cajun seasoning or something like that. Does anyone have any tried and true seasonings or methods?
 
You can't go wrong with straight up Tony Chachere's Creole Seasoning. But be warned, it can get pretty salty pretty quick.

Some where on this forum is the recipe for Tony Chacheres.Mix it your self and cut back on the salt.I plan on doing it myself as soon as I use up the 4 cartons of Tonys my friends brought me from the USA just lately.

Yeah, I don't want the salty taste just enough to give some flavor.
 
Well I did a tray of wings with Cajun seasoning and they turned out pretty good. It took about an hour to get the temp. Up to 370-400 and hold it there for the duration of the cooking. But once it got there they came out crispy and juicy. I cook them a total of about 1hr 40min.
