Smoked Beef Indian Tacos

I smoked some boneless beef ribs in my drum using a little bit of a mesquite...









Made my refried beans. Sauteed some onion and garlic in lard, added cooked pintos and smooshed them while frying, then seasoned with salt. pepper and cayenne.







Made my fry bread...
2 cups flour
1 TBS baking powder
1 teaspoon salt
1 TBS lard
about 1/2 cup of water...
kneaded and let it rest for 30 minutes..




Patted the dough out and left ridges around the edges...
then fried on both sides til golden..




Topped the frybread with beans and smoked meat.




and cheese...



lettuce and pico de gallo....



It was tasty... too much for me to eat but I like leftovers. :)

You never cease to amaze me with all the great dishes you prepare, Jeanie.

I'm sitting here contemplating...should I finish my marinated/chargrilled chix thigh, or just start knawing on my monitor! LOL!!!

You don't ever cease to amase me either. The food you are creating with a drum smoker is fabulous and looks really good. The fry is something that we will definatly make cause the wife is on a bread kick. Please keep it up so I can fine more yummy food to try to make.

Porked I guesstimate when making pico. I use...
1 chopped tomato
2 TBs or so of chopped onion
1 clove of garlic minced
about 1/2 of a japeno, minced (you can add as much as you like)
about 2 TBs of minced fresh cilantro
Salt to taste
and a squeeze of fresh lime juice.

You can adjust all of these ingredients to suit your taste buds. :)

Another outstanding meal you've made! I truly love that you make your refried beans as they should be made...with lard. That's the only way to do it.
