Smoked Beef and Pork Meatloaf Muffins

    Just received a YS640 on Friday.  Did the initial burn off the same day.  Had some friends come up to visit on Saturday.  I wanted to smoke something, but being new to smoking and working on a new pellet unit I decided to go with something I thought would be difficult to mess up.  I received an email about smoked beef and pork meatloaf from Jeff's newsletter and thought that would be great for a first try.  Here is a link to the recipe:

    I used ground buffalo instead of beef and instead of carrots I used bell pepper.   After mixing everything up, I put the meat into two different shaped tins.  The smoker worked great infusing the loafs with a nice smoke flavor(used a mix of hickory and mesquite pellets).  Smoked at 225* for two hours.  They came out great, very popular with everybody.  If you are a meatloaf fan, this is a great recipe.  Highly recommended from me.  Here is a pic when they were close to being finished.  Planning to try a turkey breast next.  Will let you know how it turns out.

    Looks good , Capta1n , meatloaf is a good dish . It's been a while for me , I have that on my list to Q and will have an excuse to be in my little smoking place...

    I would have liked to have seen more pics (Q-view) , but maybe next time...

    As I mentioned, everybody was happy with the recipe, and I am very happy with the YS640.  I will do better in the future documenting my cooks with some pics.  Enjoy some cool weather smoking in Toledo.
