Smoked Baked Steak, Tatoes, Biscuits & Pan Gravy

    I've made this before but wanted to try a different method. I ususally smoke the steak and gravy together from the beginning, but I wanted to smoke the steak first for awhile, then add the gravy later. It worked out fine, and gave each individual steak a nice smoke ring.

    I season and dredge tenderized round steak in flour, then give it a quick browning....

    I smoked the steaks and tatoes for an hour with hickory.

    While the steaks were smoking, I made my creamy gravy with the pan drippings and some caramelized onions...

    I made the pan gravy a bit thin... then poured it over the steaks in the smoker....

    Made some biscuits...
    I let the biscuits and steaks smoke for another 35 minutes, until the biscuits were done.

    The smoked baked steak, tatoes, creamy gravy, biscuits and salad...

    It was tasty......

    Yet another fabulous dinner from you again jeanie. You are starting to make me want to try alot of theses recipes that you are somehow coming up with. Are these all on your blog site ?Did it all have some smoke taste the meat sure looked like it did it looked like it had a smoke ring. Now I have smoked potatoes before some to pure goodness and let say some to not so good. Keep it up cause I just went and got a new pen to write all these down.

    Mballi, I have all of my recipes posted on my homepage...

    I usually smoke the steaks in the gravy for the whole smoke, but this time I smoked them for awhile first. That way the steaks buried in the gravy were able to get a nice smoke ring too.

    The biscuits taste great on the smoker. They do not get as dark as being baked in an oven, but the flavor makes up for the looks. lol

    BigTrain, I will get the biscuit recipe to you. It's an easy baking powder biscuit recipe. I didn't roll the dough out, just formed them by hand. Works just fine. [​IMG]

    The biscuits...

    2 cups flour
    3 teaspoons of baking powder
    1 Tablespoon sugar (optional)
    1 teaspoon salt

    Mix well, then blend in
    1/4 cup of shortening.

    Add 3/4 cup of milk and knead for a minute.

    You can roll them out and cut them with a tin can or just form them by hand. In an oven they bake at 450 degrees for 10 to 12 minutes.

    These smoked for 35 minutes at around 300 degrees.

    If you use a drum smoker, the biscuits get a nice brown color, I did this batch in my wood burner.
