Hey all! been a while!

I did some pulled pork over the holiday weekend, but I also decided to take on the task of making bacon from scratch.  Here's the outcome:

 
Nice video. I usually wet brine and make Canadian bacon for less fat. (comes with getting older etc.)

I like that we all have our different steps to some great tasting food!  Keep smoking.

Care to share a recipe for the Canadian?

Now that I've made this Bacon, I seriously doubt I'll ever buy store bought bacon ever again.
 
I use Pop's brine from here on the forum. Use the search for it . If you can't find it I'll dig out the reference and post it again. I got to take the dog to the vet for a follow up check on his eye.

I've transitioned to Canadian bacon, too, seems these days the old system handles the leaner cut a little better.  I've used wet and dry brine, both were really good, but I liked the dry brining a bit more.  Have some more curing right now, will be smoking tomorrow.  The only problem with the stuff is that it just doesn't seem to stay around very long for some reason.

Great Video!!!! I use Pops brine and make Buck Board bacon, it’s usually a little cheaper. Instead of using bellies you use Boston Butts. With pork prices being as high as they are, it's usually a little cheaper....... Now you have me wanting to make some…….. MMmmmm!! BACON!!!
