Smoked Armadillo???

So once again we are porked out from the ribs/PP at super bowl and we have a 5lb chub of hamburger just waiting for somethign to come of it.. Yep Meatloaf again.. So I made it up tossed it in the smoker and when I pulled it out to serve it up for dinner the wife started laughing so hard she had tears running down her cheeks.. Once she calmed down enough to speak I asked her what was so damned funny her exact response was
"That looks like a smoked Armadillo"
So without further ado...

It's my basic meatloaf recipe...

1 egg/pound of meat
Rub in this case Big Ron's In The House no clue to the amount probably 1/4c or so
Ketchup
BBQ sauce I actually used some Stubbs original that I had in the fridge
Couple liberal dashes of ground chipotle
Couple liberal dashes of smoked paprika
1/2 an onion chopped fine
Filler either Panko breadcrumbs or cornflake crumbs this particular one was panko amount is whatever it takes to firm it up.

Mix well and take a good whiff if it doesnt smell good just adlib until you get the aroma you expect good meatloaf to resemble.

Make into 2 loafs and top with bacon. On the rack and into the smoker at ~250 bake until IT hits 160 AND the bacon is cooked through the smaller one took 2 1/2 hours the larger that I just pulled out took 3
