I have been checking out these forums for a few weeks now and decided I needed to sign up. I have enjoyed reading many of your ideas, preferences, and advice. I grew up in a small town north of Houston and enjoyed cooking over an open flame as a child. I often camped in my own back yard with a chest full of dinner and breakfast items that I would cook on an Old Smokey. Now, as an adult, I have an offset pitt and and use it very often. Looking forward to smoking with all of you.

BTW, I married an Aggie and used to have an uncle I visited occasionally who lived in Spring.  My wife and I have a fond place in our hearts for the Houston area.

Thank you fellas. Nobounderies, I stay on the other North side of Houston lol. I am a few miles north of the Kingwood area. However, I do work in Spring. I don't know how much learning anyone will get from me here, my method is pretty basic, throw some wood in the fire box and some meat in the oven and wait a few hours lol. Pleasure meeting you both.
