I own a 44" Smoke Hollow Smoker and find now that it won't go below 180 degrees in temp.  I like to cold smoke, and now have an issue with it.  Does anyone out there know of a supply house that might have what I need?   I'd like to have two different size burners so that I can cold smoke with one side and then cook to temp on the other.  I talked to the SH customer service, but they won't offer to sell another size burner.   Also, the thermometers are terribly inaccurate...and they don't have a fix for that, they will just replace it with another bad one....no help there.

I placed 2 1000 watt proctor Silex hotplates in mine. One burner on high with pan of chips starts generating smoke in under 2 minutes and will heat to 150 in under 10 minutes. Second burner can be used for higher temps, or you can switch between the 2, having one on for an hour and the other off for an hour. The instructions for the plates say do not use for more than one hour in a 2 hour period. I put a baking sheet where the chip trays go and placed the burners there. Using it on Sunday to make 10 lbs summer sausage.

What temps are you trying to hit ?   For cold smoking, I use an AMNTS for the smoke and I leave the burners off.    Chamber temp will be just about whatever the ambient air temp is.
