Hi, I live in Chicago. I am fairly new to smoking, at least compared to many of the people on these forums. Basically I love smoked meats, I'm a chef, and I love anything having to do with food: cooking food, cooking equipment, cocktails, buffets, camping, hospitality, picnics, oh I could go on....

I am currently working on building my own file cabinet smoker, a project hindered by the fact that I am a way better cook than a craftsman. I have used industrial smokers in a kitchen and decided that I want to build my own, including independent temperature, humidity, ventilation, and smoke control (um, can anyone teach me Arduino?). I've been at it for a couple months now.

At home I have a pressure smoker, which I bought because it was cheap and I was interested in how it worked. I also have, or would have, a cold smoke generator I built if I could stop taking it apart and putting it back together. I keep flipping on whether to buy a MES30 because I keep seeing them for a decent price, but somehow that feels like giving up on my projects.
 
Hello and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  Check out Jeff’s 5 day smoking E-Course ( link below ) that will help you get started.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!
