Hey, All.

Just wanted to introduce myself.  For starters, I'm happily married to a wonderful lady and I have three great teenage kids.  I'm from Southern Indiana and love grilling and slow slow slow barbeque,   I make my own dry rub and bbq sauce from scratch.  I've been doing my slow smoking in a barrel grill with good success for years, but getting older and tired of babysitting the temperature constantly, so I'm in the process of gathering parts for a horizontal smoker.   I've been searching for information and always seemed to wind up back at this site, so I figured I should join and participate instead of leeching.

I just recently made my own bratwurst recipe (spices, grinding, stuffing, and all that good stuff),

I'm a big fan of any pork product, but prefer making ribs and brisket and enjoying all the wood smoke and beer that go along with it. 

I prefer to use apple wood with a bit of oak and hickory for smoking. I use cherry and maple sometimes also, but not as often.

I also like to use a light spray bottle full of apple juice on my ribs every couple hours.

That's all I got for now.  Thanks for having me and hopefully I'll be able to contribute half as much as I learn.
