Small Pork Butt on a friday night.

    Last night I put a small 3.5 lb pork butt in the smoker at around 1 in the afternoon.

    Smoked it over hickory wood for 6 hours to an IT of 205 deg then let it rest for 2 hours

    and pulled it for dinner at 8:00 pm. Damn that was one fine tasting pulled pork sandwich.

    Looks GREAT!  It will be even better today if there are any leftovers.
