Small Emergency, Sorry

    I'm sure we Newbies are real pains.....[​IMG]

    I bought a very small pork butt (3 lbs) that is held together with a mesh, I assume so it won't fall apart while cooking.  Should I take it off before I rub it and smoke it in a 8X8 aluminum pan?  Or rub it with the mesh on and then smoke?  I don't want to hurt any bark I can get but I also want a great pulled pork.

    I always rub and smoke as is.

    LOL, this is what happens when you live in the Northeast.  I can't find a brisket larger than 5 lbs.
  6. I totally understand! The butchers here tried to sell me $9.99 lb New York Strips Steaks as Tri Tip. You just go with what you can get!!!

    How fine is the mesh ?   Are you talking about a real fine mesh like cheese cloth ?  Or something with much bigger gaps ?

    Based on what you said, noted in red, Remove the mesh, your bark will become one with the mesh when you go to remove it.
