Since I'm kicking off my official start of summer and no work for two months, decided to throw on a chuck roast for the first time. Not a big one only two pounds. Rubbed it down with salt, pepper, garlic, chili powder. Smoked with pecan for 2.5 hours at 250ish then wrapped. Waiting as I type to get the temp to 195-200. I'll post pics later.
 
Two months off?? What's up with that?? Should have plenty of time to smoke more when your hungry!
