Slow draw vs FAST draw

Whats the benefit of a faster draw compared to a slower draw on an off set smoker? Why do people want a fast draw compared to a slow or the other way around?

Hello.  Welcome.  I see this is your first post.  Please take some time and swing over to Roll Call and introduce yourself so that we may give you a proper "Hello".  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  As for your question: 

This is a first for me.  Maybe others have heard of this.  I have been doing this about 40 years.  Fast draw?

I "get" your question.  I think!  You are asking how fast the smoke should circulate through the smoke so as to not create creosote in the smoker and and add a NASTY taste to the meat.  Creosote is actually harmful to your health.  Bet you just thought it was a air flow question.  Or you didn't know what it was about and you thought you should ask.  Well your friends who told you about this know "a little".  DO NOT CLOSE YOUR SMOKE STACK!!!!   There are exceptions once you have experience but we won't go there, FOLLOW THE RULE!   If you do that all will be well.  You can produce quality food for fiends and family and all will be good.  Keep Smokin!
