Hello from The Blue Ridge Mtns. near Roanoke, VA. I am a native Virginian exposed to smoked meats/fish at a young age. Global travel affords multiple ops for sampling smoked goodness from different cultures. I won't go into the boring ego stroking stuff here of where and what I have experienced and eaten. Just Know this nose knows smoke and how to prepare on all levels and am very experienced in the sampling of the results of unreal personal devotion we all have to this ancient way to cook.
