Turkey hunting season recently ended when i get a wild bird I skin it so i do not have to deal with plucking the feathers this removes skin which holds fat so how I deal with this is simple salt the bird inside and out a little pepper inside and out now strap several slices of bacon over the top / breast and legs this not only adds the fat back but adds yummy flavor stuff as you desire I like using apples and pairs with breading
