Sirloin Tip Roast

  1. 4.5 lb CAB sirloin tip. Coated in Wellfleet sea salt, cracked black pepper, crushed red pepper, cumin, and chili powder.
  2. Smoked over Royal Oak Briquettes, hickory, Apple and peach wood. Brought to 140 IT, rested for 90 minutes. Sliced and served at 146 degrees.

    I have a 2 pounder that will be going into the smoker later today.  Hope mine turns out that well!  Good Job!
  7. Looks great! I have a bottom round roast going on later today to help me celebrate or commiserate after this afternoons Husker game.
