Simple Pot Roast

3-4lb roast

1/2 Onion

3 tbsp Rosemary

1 clove garlic

4 tbsp olive oil

1 can tomatoes

1 cup water

3-4 carrots, cut

2-3 celery stalks, cut

salt and pepper

This is a simple recipe that I use on cold snowy days

Salt and pepper all the way around the roast

Put 2tbsp oil in a DI and brown the roast, remove it when browned

In the hot DI,

Saute the onions, carrots and celery until soft, then add the garlic ( I use the whole clove, uncut)

pour the tomatoes and water over the saute and out the roast on top

Put the DI lid on and put it in the oven at 325° for about 3 hours. The braised roast usually falls apart.

I make a creamy polenta, place the roast over that and cover with some of the juice.

I put the left overs in a CI skillet, reheated it added water to steam it. Then I added some chilli powder, cumin, paprika and a little cilantro to use for burritos at lunch today. The kids loved it, while they were home from school on an icy day.
