Silly question?

    Does the starting temp of the meat affect the plateau? I mean, if I throw a butt on the smoker right out of the fridge will it have a longer plateau than say a butt that's been sitting at room temp for a few hours (obviously it will take longer to cook...)?

    I'm sure this is a silly question based upon everything I've read (the plateau is different from piece to piece), but was just curious to any opinions. Thanks.

    No effect in my opinion and there are no silly questions. I do think I get a better smoke ring with cold meats tho

    I agree with piney, they say the smoke ring stops forming in the 130's, and that cold meat stays in that range longer.

    I've just learned something new to apply to my butt smoke tomorrow (Saturday). I was planning on leaving it out while the grill was pre-heating, now it will go on straight from the fridge.

    Excellent. I too am doing a smoke tomorrow (butts, chix, and a slab of ribs just cuz) so that info will come in handy. I am hosting a little gathering and need to have everything ready by 6 pm-ish. I'm doing two 6.5 lb butts so I'm hoping *crosses fingers* that if I start by 4:30 am that the butts will be done by then. I'm doing a slab of ribs for lunch (figure I'll start 'em around 6 am) and then put in the chix after I take the ribs off. I'm also doin' dogs and burgers on the gasser just in case. [​IMG]

    Should be a good time!

    i go straight from fridge to ECB with my ribs - good smoke ring - bacon-on-a-stick.

    Don't forget to put on a breakfast fattie on in the morning when the butts go on. It will be done about the time the rest of the family wakes up.

    Heck my wife rolls the fatties around here. She had been saying she didn't want a breakfast fattie until we made one. Now she says it was our best one yet. Last weekend when I did my pulled pork, breakfast was a fattie, lunch was ribs, afternoon snack was abt's and dinner was pulled pork and Dutch's beans-all from the smoker. Sounds like you will have a similar day going this weekend. Can't wait for the q-view!!
