Shrinkage?

I just would like to find how to keep it from curling up when frying.
 
What???? No cast iron??? Then another pan or pot with some water or other heavy items will work too.
 
Another alterniaive is to start your bacon in a cold pan.

Turn frequently and cook gently.

Pain in the behind, but it will work.

If doing more than one load through the skillet, future loads will cook quicker and need careful tending.

For large batches, bacon in the oven is common in high volume institutional cooking.
