Hey Everyone, thought this would be a good thing to share.

I signed up for the newsletter from the site, and the first recipe that came to my inbox via Jeff was the Shrimp & Cream Cheese Stuffed Jalapeños

I knew I wanted to do this, and today I finally got to it.

Now Jeff mention's in his recipe to use whole shrimps, but my concern even bacon wrapping them was 3 hours, they may end up a tad rubbery, so... I decided to put them through a food processed instead.

I took the Shrimps and 1TB of my spice rub and processed. Then let them sit in the fridge covered for an hour to let the shrimp acquire the flavourings of the rub.

Then, I mixed the shrimp in with the cheddar/cream cheese/rub mixture, stuffed the mix into the pepper, bacon wrapped them and smoked for 3 hours at 225 with Tequila Barrel wood chunks

IN the meantime I also had a couple racks of ribs on, 3-2-1 method, and when I put the Jalapeno's on I added 2 potato's and 3 ears of corn.

These were so delicious, the shrimp flavouring was in every bite, and the were not 'chewy'

If my boy keeps paying attention he's going to turn into quite the chef! Makes me a proud papa having him take an interest. Tonight by request for him, we are having 'spinning chicken' aka rotisserie chicken :)
 
Very nice, especially to see your son helping and I'm sure PUPPY helped keeping the floor clean as well.
