Shredded Chuckie Chili and Beer Bread

So I had a fair amount of Shredded Chuckie left over and decided to make a chili, gumbo type thing.. Not sure exactly what to call it other than darn good... To go with it I made up a bacth of Cowgirls Drum Beer Bread with Jalepenos and Sharp Chedder.. I think I should have brushed the top with a little egg wash since I did it in the oven but either way it tastes phenominal...


Couple Yellow Onions, Some Carrots, Celery, Red Bell Pepper, and Garlic all sauted down.


Couple pounds of Hamburger, couple finely chopped Chipotles, Red Pepper flakes, Chilli Powder, Cumin, SW spice(can't remember what was in it have to look at my recipe the next time I make it), Fiar amount of the rub that I used on the Chuckies originally(Ron's In The House), Salt n Pepper. Simmered it all down deglazed the pan with some good Merlot.



Then into the Crockpot she goes. Along with ~2lbs of Shredded Chuckie and 2 cans of Fire Rosted tomatoes, and 6oz of Tomato paste,Topped with 1 box of Low Sodium Beef Stock.


Simmered for about 4 hours topped with some cheese and Sour Cream. Served over some Uncle Ben's Wild Rice



Beer Bread. I mixed in about 1/4 of Chopped pickled Jalepenos and a couple handfuls of Sharp Shredded Cheddar. Baked it in a 300F oven for about 1 15min.

That looks perfect for a cold winter day! There's always a use for leftover chuck and pulled pork.

I'd call it Chuck Chilbo (I guess it comes from seeing Tim Tebow this morning on ESPN)......

Looks like a winner to me. So many ways you can make chili... I like your take on it!!

I really like that chilli and that bread looks great and you say that's cowgirl recipe can you post it for us out here that missed it. Now I have never used wine in chilli either so what does it add to it???
 
Bread recipe is super simple...



3c Self-Rising flour
12oz room temp beer
pinch of Kosher salt


I added in 1/4c of diced pickled jalepenos
and a couple of big handfuls of Sharp Cheddar

I think if I do this in the over again I would brush it with a egg wash.. If I was doing it in the smoker I dont think you would need to.
 
You can sure shoot from the hip, great looking meal. Lots of great flavors and textures. Congrats my friend.
 
I think deglazing the burger pan with the merlot added a whole new lair of flavor to it.. Since it was a fairly "dry" Merlot the tannins also added a tartness to it as well.
