pop smoke!

Being a newcomer, I thought I should post a Q-view as an introduction.

I had planned to post a rotisserie chicken I did a couple of weeks ago, but I made a rookie mistake and forgot to remove the warming basket in the Weber Genesis grill. When I took the bird out, the basket had knocked off the legs!

I did a little better this time.

Fourteen pound turkey with apple chips at 350 for 1 hour and 250 for 1 1/2 hours. The dark meat was a little over cooked. Plus...I forgot to cover the legs with foil.

I think I over smoked it a bit. I have a little tannin aftertaste. My wife though the white meat was fine. I'll try it tomorrow for lunch.

It took me awhile to figure out how to get smoke in a Webber gasser. Now I think I'm over doing it.

I'll have a real smoker soon.

If it makes smoke it can be a "real smoker".

Any smoker is going to take some trial and error experiences to figure out it's "personality". I've only had the one smoker (an MES) but my experiences are different than some of the other members who also have an MES. Just give yourself and whatever you're smoking in some time.

You HAVE a real smoker! If ya go get another one you'll have to start all over learning it's quirks and stuff, and yer prolly already half way there with this one. Most of the main lessons apply across the board, but every smoker, even sometimes among the same brand and model...has it's own "personality". Master this one and then make the call on a new one I say
