Howd do everyone.
Real glad I discovered this great forum.
Been doing some reading around for awhile this evening and all I can say is: so much good info so little time...
My name is Don and I am very much into the all things food and especially meats. My interests range from cooking to smoking to (soon to be) sausage making. Right now I just have a small electric smoker now but am really thinking about building a small smoke house like the ones I grew up with in Virginia. I'm also researching cold curing methods and am actively fermenting brews and vegetables. I have no idea where all this is leading to as I follow my whims but am pretty sure it's going to be delicious.
I live in Southern Maryland on a peninsula, between Washington, DC and Virginia with the Patuxant River on one side and the Potomac on the other so besides meats, seafood will figure heavily in my preps. (Smoked Bluefish anyone?)
If you haven't figured it out already I live in the rurals or "out in the country" as we say, so there are plenty of farms and livestock farmers from which I can buy most any meat product. I'm really lucky in that regard. Well enough about me.
Like I said, I'm happy to be here, thanks Jeff for the add, and I'm ready to learn from others and share my expertise where I can. Cheers!
