Shoulder on the PBC

    ive done a few shoulders now on the pbc and want to try one without foiling it. Anyone have any tips or experience with it? Cook time? Better bark?

    Using a cooking grate or hanging?

  4. Hey Cayts how'd it go?  I'm planning on doing the same this weekend with my PBC that was delivered this week.  I'd be thankful for the info and any tips you could pass along!

    Most likely to late butt😆 I would cook it on the grate it could easily get to tender and fall off the hooks. Assuming you have cooked one wrapped it will take longer and have a much crustier bark. Don't forget we all like pics!

    I actually didn't try it. I want to though...really want to save the bark.

    For those if you that have done it, do you have any actuals on cook time? Did you have to reload the charcoal? I usually budget about an hour per pound using the foil.

    I just did a butt in my MES 30, took a long time, but had great bark.  I foiled it at 190 and brought it up to 210.  Didn't interfere with the bark at all.  I agree with b-one about cooking on the grate.

    Just me saying.
