We had some company coming for the weekend, and they requested some Q. I picked up a 9lb shoulder and three racks of BB's to smoke.

I did the Chris Lilly injection and rub on the shoulder.
Here is the shoulder after injection and rub:

Outta the smoker and getting ready to be foiled:


The shoulder was very good....it was the first time I have injected one. It won't be the last! This thing had tons of flavor! I made up a Carolina red sauce from cider vinegar, ketchup, sugar, and red pepper flakes to go with the pulled pork.

On to the ribs....I used the Apple City Ribs from the Smoke N Spice book. They are a bit sweet, but not cloyingly so. Everbody said they were great. I also made the Apple City Sauce to go with them. Great sauce too!

Ribs all rubbed up and ready to smoke:


After about 4 hours in the smoker. I glazed them twice with the Apple City sauce. :
 
Great looking shoulder and ribs, BuffaloSmoke. Any pics of the plated goods?

I'm not familiar with the "Chris Lilly injection and rub" -- is that something you found here on SMF? Looks like something I'd like to try.

Ahh no.....That's one thing I need to work on. By the time I plate the food I have usually consumed a few adult beverages and forget all about pictures!

I was searching on here for injection ideas, and I found a few references to the Chris Lilly rub. I just goggled it and found the rub and injection. It really is good eats!
 
You bet. Here it is:

For the pork shoulder rub
1/4 cup dark brown sugar
1/2 cup white sugar
1/2 cup paprika
1/3 cup garlic salt
1/3 cup kosher salt
1 tablespoon chili powder
1 teaspoon oregano leaves
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper
-----------
Pork injection
3/4 cup apple juice
1/2 cup water
1/2 cup sugar
1/4 cup salt
2 tablespoons Worcestershire
------------

I'm looking forward to trying this on a few butts in the near future.
