So today I did some ribs. They were called Bob Evans spare ribs. I have never had a problem smoking ribs before until today. They turned out tougher than leather, they sucked, pissed me off! I was planning on throwing them away unless there is something I can do to tender them up ALOT!!! They taste good so if I can save them I will, but not sure what to do.

Try and put them in a hot oven 400' for 1/2 hour covered with some liquid, then in a cool oven 225 -250. It may take some time but eventually the brasing will do it. Just check the pull back and also if you can push your finger between the bones they will be done.

    Hope this helps.

You can also braise them using a dutch oven and some stock with the stove burner on low.
  5. Maybe you got one of those methed out propane tanks from the Wal-Mart. You should try burning charcoal for a change! [IMG]

Just kidding (sorta). I saw the food. It looked good in the smoker. Bummer they didn't turn out. Thanks for sharing your beer though!

Who is this Bob Evans guy anyway?

Cubguy, one of our local stores was seliing 10lb boxes of bob evans ribs for $10.00. Had to try them ........ worst ribs ever. These were back ribs if that makes a difference. I tried smoking, grilling, even tried boiling before gilling (on advice from a friends mom) ..... never did get them tasting real good.

Won't be buying anymore of them

So has anyone got any similar advice for a dried out shoulder? I can salvage some of it. And I can tell that the finishing sauce (Jeff's) will help a lot, but I had one end that stubbornly would not get up to temp. Unfortunately, I shoulda realized the other end was doner, 'n done, I cold pulled it off and left the rest to keep cooking. When I went to turn it at one point (The only time I tried to turn it- to spray the other side) it was falling apart, and stuck to the pan.

So can I salvage this butt?

smoked it in a Weber Genesis Silver using Mesquite chips, Gave up last night and brought it in to finish in the oven at 250- It's a shame to kill a perfectly good piece of meat fer nuthin'!
