The thermometers I just sick into my UDS 3". Makes getting the charcoal basket out a bit of a pita. Anyone know of a shorter one?
 
Digital with wired probes is the only way to go. You can move the probes wherever you want. I don't use any fixed probes as they tend to not be accurate and are either in the way or not where you need them.

Remember someone telling me that they used some sort of electrical part as a pass thru on a UDS or RF smoker...but can't remember what exactly it was...
 
I don't know anything about a UDS, but I drilled a hole in my Weber 22.5" kettle and screwed in a short piece of lamp wiring screw on tubing. It allows me to run my Maverick probes through the hollow core. I learned by trial and error - mostly the latter - that this piece needs to be very short or you won't be able to get the probe through because the end of the probe where the wire is attached is bent at 90°. If your tube is too long you can't get the probe through it.
